Vic Vegas Comes Full Circle

Vic Vegas moved to Las Vegas at age 14 and has called the city home since then. After several years of jobs, Vic Vegas comes full circle with the opening of his 7 Sinful Subs shop on Maryland Parkway a few doors down from where he started his culinary journey.

Vic started his culinary career at the now closed Tom & Jerry’s Grub & Pub which was located on Maryland Parkway near UNLV. He was a dishwasher. He subsequently worked at several places in Las Vegas. Vic worked hard and learned what he could at each restaurant and bar, but he says he knew he wanted a career in culinary the first time he walked into the kitchen at Ferraro’s. Vic Vegas has never been to culinary school, but has had plenty of on the job training. With each restaurant and every position in the kitchen, he learned something new. When I used the term “self-taught”, he gently corrected me and said, “No. I am not self-taught. I am self-inspired. I had the desire and other people taught me.” For me, that is a really telling statement. He credits all of the chefs, cooks and staff he has worked with over the years with helping him to become the person he is today. He never says he did it himself.

I first learned of Vic Vegas when he appeared on the show, Next Food Network Star. And like many Las Vegans, I cheered him on and rooted for him to win. He didn’t win, but that show shifted his life and his career began to snowball. Vic said he had applied to the show numerous times and the one time he didn’t send in his application was the time they called him and said they wanted him. He quit his job at the Rumor Hotel to film the show and has never looked back.

The most surprising thing about Vic is that although he has always worked, and worked hard, he was, at one time homeless. After splitting with his ex, he moved out of his home, and continued to pay the bills, so his kids would have a safe place to live. He couldn’t afford two places, so he couch surfed and lived on the streets until he could make all the ends meet. This was shortly before we all saw him on Next Food Network Star. Since the airing of that season, his life has changed drastically as you can probably imagine. Despite his celebrity, he is a private person and though we are friends, was somewhat reluctant to sit with me for this interview, because he knew it would be about more than the shop and his career.

One of the things that makes Vic Vegas special is that no matter how busy he is, he continues to make time for the important things. Family is everything to Vic and his friends are a close second. He also makes time to give back to the community. He is actively involved in St. Jude’s Ranch for Children in Boulder City. He volunteers for Three Square Food Bank (my pet charity) and the day I met him for this interview, he was appearing as a local celebrity at a fundraiser for a child with cancer that was being held at a local pizzeria. Unlike some, he knows with celebrity comes public expectations and a responsibility to give back. Vic doesn’t look at it as a burden, but as a gift to share what he has been given in his life.

When you go to 7 Sinful Subs, you may not see Vic Vegas. Don’t be disappointed. He’s a busy guy! You can catch Vic on episodes of Bar Rescue on Spike TV (he is part of a team that goes into struggling bars with food programs to help them move their business forward). In addition to the sub shop, he works as executive chef/culinary consultant for Nicholas & Company food distributors. And, as if he wasn’t busy enough, he’s getting ready to launch additional locations of 7 Sinful Subs (locations to be determined and I begged for a location in my neck of the woods). What you can expect when you walk into 7 Sinful Subs is what I like to call Classic Italian Subs with a Vegas twist. Clever sandwich and salad names, combined with interesting artwork round out the theme. The subs are fantastic! 7 Sinful Subs is located at 4632 S Maryland Pkwy #12, Las Vegas, across from UNLV. They are open daily at 11 am. Look in the student coupon book for UNLV next semester for info on how you can save. So Here’s the Thing…

I really enjoy writing this blog for all of you, but no one pays me to do it (yet).  So you need to know when I get paid to do my job – event management and coordination – I won’t be writing much. So you now know why I haven’t been posting as normal.

In November I had the pleasure and good fortune to work with Yummie Nation on the first FOOD Blogger Conference, Food Fight Write, in conjunction with World Food Championships. It was a test of my skills, strength and stamina and barring one mistake leading to a major screw up, it all went pretty well.  Keep in mind this was a first time event, constructed from the ground up this year, and hiccups were to be expected. Next year’s event in Orlando is sure to be a bigger, more bad ass event!

Lesson learned from this job? Never, EVER expect that anyone other than you knows how to do their fucking job.  No matter how big a company they are. No matter how long they have been in business. ALWAYS follow up and make sure they are doing what they have been contracted to do. My major failing was that I didn’t follow up. Yeah. That.

And then there was Tgiving – I host a BIG gathering every year – 25 in attendance this year – and some friends from High School flew in to enjoy the day with us. The Boy was home and there was much rejoicing.

December brings all the usual challenges and stressors. I feel like I should be doing more, handling everything, making an appearance at every party and hosting a few of my own. When I don’t do all of that I internally feel like a failure, even if I am doing more than expected.

I have been sitting on several pieces of info since September and can’t divulge ANY of it because I was told “off the record”. Some have been made public and some have not.  It is my sincere hope that one day I will get the honor of BREAKING a story and get to publish first.

Vegas Uncork’d and Mother’s Day Weekend

May has been a study in contrasts for me so far here is the breakdown, the good, the bad and the ugly.

The first weekend was a successfully executed pub crawl and surprise party for the hubby’s 50th birthday.  Two full days, more than 50 people, 7 venues – including my home – 2 dinners, goody bags, airport runs on the sly and with just a few hiccups, it ran beautifully. With all the moving parts required to pull this off only one venue was a disappointment.  We didn’t allow that one bump in the road to mar the event. The hubby was thrilled and a good time was had by all! Mission accomplished!

Last weekend was arguably one of the biggest foodie events in Vegas – Bon Appetit’s Vegas Uncork’d. In the past few years I have worked the Grand Tasting event for Texas Pete Hot Sauce.  Because they elected not to attend this year, I had the opportunity to attend as a guest. All things considered, I prefer working it to attending it. When you work the event you are there early and leave late. Because I am not an A list journalist or other celeb hot shot, I didn’t get early admission this year and entered with the GA tickets.  All I can say was that it was over sold.  At $225 per head, we could barely squeeze thru some of the areas and getting food at some of the booths was nearly impossible. Bonus – I had a great conversation with Bruce Bromberg of Brooklyn Bowl and Blue Ribbon Sushi. John and I both agreed that we’d rather spend money on the smaller, individual events (like the Master Series Dinners) next year and that we won’t attend unless we are comped or get early admission. Highlight bite of the night? Foie gras macarrons at Michael Mina’s booth.

Lee’s Liquor Beer & Tequila tasting event was something altogether different!  A really well laid out floor plan allowed for maximum traffic flow so we were able to try everything we wanted without missing anything.  Friendly vendors, live music and a fun crowd at an affordable ticket price made the whole event a winner.  Of course there was no FOOD, but that was remedied with a cab ride.  We did this as a Girls Night Out and I am so glad we did.

Despite disappointing bland dishes, brunch on Mother’s day with friend Lillian and her family was fantastic.  It was more about the company than it was about the food. Bottomless Bloody Marys for the Moms and great conversation with fantastic service was just what the doctor ordered!

 

Vic Vegas hosted a viewing party for his appearance on Bar Rescue and I was honored to be on the friends and family list.  He is a charming host and a lovely person.  Hanging out with peeps I enjoy in a venue with a breathtaking view was the perfect cap to my Mother’s Day weekend.
